軟水釀酒趨勢由來
1897年(明治30年),廣島的三浦仙三郎研發了“軟水釀酒法”。由於他對吟釀酒的貢獻,三浦仙三郎被譽為”吟釀之父”。用廣島軟水釀造的清酒,其旨口和吟釀芳香風格在《全國新酒評鑒會》叱吒一時。這使得廣島亦變成著名的酒鄉之一。

 
由於軟水釀造的清酒口味更適合現代人的胃口,且據調查結果顯示,在日本《名水百選》中,軟水多達72處、中硬水有26處,硬水及超硬水僅各1處,於是用軟水釀清酒也逐漸演變成了一種趨勢。

硬水的代表是奈良的“風之森”。金剛葛城山系的地下水是超硬水

軟水的代表是愛知縣的“蓬萊泉”。另外,在愛知縣山中,緊鄰水壩的“水之鄉”湧出的水是超軟水

不同清酒酒類的適宜飲用溫度

普通酒、純米酒、本釀造酒 – 冷熱室溫飲皆可 (10-45℃)

吟釀、純米吟釀、大吟釀、純米大吟釀 – 冷飲或室溫飲 (15-20℃度最佳)

生酛、山廢 – 熱飲最佳、室溫及冷飲亦可

生酒、生原酒、生詰、生貯藏酒、古酒、活性酒 – 冷飲較佳、室溫亦可、不能熱飲

室溫是指20℃左右,若酒標上同時有A項跟B項,則以B項的判定優先。例如: “大吟釀”基本上是冷飲的,但如果是”山廢大吟釀”,則可以溫熱飲用。

總體來說,生酒系列冷飲較佳,室溫也可,但不能熱飲。吟釀、大吟釀系列推薦冷飲或常溫飲用。普通酒、純米酒尤其是山廢系列和生酛系列,推薦加熱飲用。不過以上只是一般法則,大家也不一定要被各種規則限制,多多去嘗試,多多去探索,去尋找自己最喜歡的溫度。

ultrafast rendezvous to ISS

    14 Oct 2020,  being the first to use a new “ultrafast” rendezvous” scheme with the ISS.
