Sake清酒的 酒度 酸度

清酒的含量是用比重計(hydrometer 酒度計應可以量度 )測定的。

簡單地說,在水為±0的情況下,如果含糖量高,就會比水重,比重計就會向負值傾斜,如果含糖量低,即是比水輕,比重計就會向正值傾斜。

日本酒度S.G. 指的是「15℃ 的日本酒, 跟 4℃跟水比較,密度是高還是低」,詳細的定義是「日本酒度 =(1443/比重)-1443」

因此,負值為甜,正值為辛。

一般認為,清酒含量低的清酒口感偏甜,

清酒含量高的清酒口感偏辛



但由於清酒的口感並不是單單由清酒含量決定的,所以最好以此為粗略指導。

清酒度數在-1.4~+1.4為正常,清酒度數在+6以上為大辛口,+10以上為超辛口,-6以下為大甘口,-10以下為超甘口。

日本酒整體的平均酸度在1.14~1.44之間,據此,酸度越高,口感越豐富、越深,酸度越低,口感越淡。 

甘度和辛度來看,酸度高的清酒容易讓人覺得辛口,酸度低的清酒則容易讓人覺得甘口。

一般來說,酸度高的酒更容易被認為是辛型酒,而酸度低的酒更容易被認為是甘型酒。

ultrafast rendezvous to ISS
